Cubed Steak with Smashed Potatoes and Sautéed Onions


Hi! This is a flour-less recipe and very easy to make and affordable:

Cubed Steak
Salsa
Smashed Potatoes (perfect for left-over mashed potatoes)
Green Beans
Sautéed Onions
Ingredients:
cubed steak
1 large onion
1 jar of your favorite prepared salsa (or homemade)
salt, pepper, garlic powder
2 tbsp canola oil
Yukon Gold potatoes (or whatever is on hand)

Cubed Steak


Slice your family's favorite Onions. 
Heat canola oil over medium heat, 
add seasoned cubed steak and onions, 
and pan fry until cubed steak is cooked and onions are tender. 
Top with salsa and simmer.

Potato: Boil (or microwave) small Yukon Gold potatoes until done. Drain and place on counter. Cover with clean paper towel and smash with palm of hand (or spatula). Many people enjoy using their left over mashed potatoes in this way. We have tried that, too, and have been pleased with the results.
Preheat fry pan with canola oil (or bacon grease if preferred) over medium heat. Carefully place spatula under smashed potatoes and place into preheated fry pan. Fry four minutes on each side until desired consistency is reached. Add salt and pepper. Serve with dollop of sour cream and garnish with chopped green onions.

TIP: This meal may be partially prepared earlier in the day, or the night before by cutting onions and placing in a baggie. Peel potatoes and do the same.
Salsa does not need to be “hot”. Just create the right balance of tomatoes, onions and peppers for your family.
