Collard Spaghetti

Sharing a healthy, fabulous recipe which has helped GERD (commonly known as Acid Reflux Disease), Maria says:
"I love my spaghetti but cannot tolerate the sauce.  I found out, though, that I can handle fresh tomatoes if not overcooked.  Here is my recipe for a not so conventional spaghetti."

Ingredients:

1 onion, chopped
1 green bell pepper, chopped
2 cloves of garlic, minced
1 lb. ground beef
2 green onions, chopped
Collard Greens, chopped (as much as you like)
2 large tomatoes, chopped
Dry Oregano to taste
Dry Basil to taste
Salt and Pepper to taste
Spaghetti or other favorite pasta

Method:

Saute 1 onion, 1 green pepper and two cloves of garlic until
translucent but  not brown.  
Add 1/2  to 1 lb. ground beef.
Saute until lightly browned.
Add  tops of 2 green onions, pre-cooked chopped collard greens (as much as you like, it is delicious), 2 large chopped tomatoes, dry oregano and basil to taste, as well as salt and pepper.  

Spoon over spaghetti.

Serves 4 to 6 people.
