Donna's Zucchini Pancakes



Wonderfully fluffy and flavorful pancakes the whole family will enjoy. Makes 8 large pancakes or 16 silver dollar pancakes. 



Ingredients:

1 1/4 cups unbleached bread flour

3 tsp baking powder

1 tbsp honey

1/2 tsp salt

1/4 tsp cinnamon

dash of ground cloves

1 beaten egg

1 cup milk

1-2 tbsp grape seed or canola oil

1 cup freshly shredded zucchini 

Butter (if desired)

Maple Syrup or fruit

Gentle twist of a fresh lemon quarter


Directions:

Sift together flour, baking soda and salt.

In separate bowl, beat wet ingredients, being sure to add cinnamon, cloves, lemon and honey.

Slowly pour dry ingredients into wet mixture, and stir with fork. Mixture will be slightly lumpy. Lightly toss in zucchini. Over stirring will produce less fluffy pancakes.

Bake on your favorite hot griddle.

This batter is sweet, flavorful and very fluffy.

NOTE: substitute all purpose flour if bread flour is not available.

Serve with your choice of:

Maple Syrup
Fruit Preserves
Butter
Fresh Fruit
Peanut Butter
Apple Butter
