Sautéed Sweet Potatoes, Poblano Peppers and Red Onions



This is one of my favorite sides, and actually flies solo for lunch, too.
High in flavor, vitamins, antioxidants and minerals, it works well with just about any animal protein.



Ingredients:

Sweet Potatoes
Poblano Peppers
Red Onion
Olive Oil
Garlic, Pressed
Pepper Flakes
Salt, Pepper, Cayenne
1/4 cup water




Method:



Wash Sweet Potatoes and place in 1/4 cup of water in covered Pyrex or Glass microwave container. Cook on high for 4-5 minutes, unless the potatoes are small, (if small cook 3-4 minutes).



While potatoes are cooking, rough chop peppers and onions, and begin to sauté in olive oil. Season as desired (we used pepper flakes, cayenne pepper, a little salt and pepper). 



When the potatoes are finished, rough chop them and place in pan with peppers and onions. 

The potatoes are naturally sweet, so additional sugar is not needed.




Sauté until desired texture is achieved.
